If you love St.Patty's day and pistachios then you'll love these cupcakes with our Crispy Peach Tea! Yum!

For cupcakes:

  • 1 box of white cake mix and it's ingredients
  • 1 box of pistachio pudding mix
  • 1 tube of green food coloring
  • 1 batch of Cream Cheese Buttercream Frosting (recipe below)

Instructions

For cupcakes:

  1. Combine cake mix and it's ingredients as per instructions.
  2. Add 2 small drops of food coloring.
  3. Add in pudding & mix well.
  4. Fill cupcake liners about halfway full with batter.
  5. Bake as directed on cake mix packaging.
  6. Cool and decorate as you like.

For Cream Cheese Frosting:

  • 4 ounces unsalted butter, softened
  • 4 ounces cream cheese, softened
  • 1-2 cups sifted powdered sugar ( Start off with a cup and increase based on your preference)
  • 1 teaspoon vanilla extract
  • 1 drop of green food coloring

For Cream Cheese Frosting:

  1. Beat room temperature butter and cream cheese with an electric mixer or paddle attachment for about 4-5 minutes until smooth
  2. lower speed and slowly add the sugar until well incorporated
  3. Add vanilla and mix until incorporated.
